1/16 Happy Meatless Monday-Strawberry Radish Slaw

Happy Meatless Monday. I have been thoroughly enjoying the abundance of berries currently available at our local grocery stores. I have had the most amazing raspberries, blackberries and even strawberries. It has been a welcome respite from winter in Michigan and a reminder that this too shall pass. The snow will melt and the pavement will once again become warm and sidewalk-chalk ready. To tide you over, I present Strawberry Radish Slaw.

Santa Claus brought  Sandy a mandolin slicer. Since then, we have thinly and thickly sliced practically everything we can get our hands on. Her mandolin also has a julienne attachment that creates the sexiest matchsticks I have ever seen. This recipe calls for julienne sliced radishes. If you do not have a mandolin slicer, feel free to cut your radishes any way you prefer. The flavor will be the same. Radish matchsticks are also available by the bag at some grocery stores.  I found them at Meijer near us.

Strawberry Radish Slaw

Ingredients

3 C radish matchsticks

3 C sliced strawberries

1/2 C Orange Muscat champagne vinegar (I absolutely love this vinegar. I used Trader Joe’s brand. If you can’t find this type of vinegar, use any sweet white vinegar you like and add a smidge of agave if you need to. The muscat grape and orange give this vinegar a sweet and citrusy flavor.)

Make It Happen

~Put all ingredients in a bowl and toss gently to coat. Chill then serve.

The vibrant hue of the Muscat Orange vinegar enrobed the strawberries in an irresistible glow. The slaw was tart and sweet with a dainty crunch. The taste is light but with significance like an established slaw. It is fragrant and fun…the way food needs to be in the middle of January.
