12/7 Tofurky Mojo Part Deux

The only thing better than a Tofurky roasting in the oven are Tofurky leftovers in the fridge. I took the leftover Mojo Tofurky and made it into an entree salad with wild rice, pecans and figs. I also threw in an enticing red apple for crunch and color. I served the Tofurky salad on a lightly dressed bed of  Baby Arugula. It was the perfect December lunch. It was hearty enough to  feel substantial, but light enough to be an energetic and sustaining meal.

It reminded me of something you would enjoy while sitting in an unforgettable cafe overlooking the ocean, so that is what I named it. It is also the perfect meal to enjoy while taking a hurried lunch break in your home office while it is 20 degrees outside and snowing…either one.

Cafe Salad

Ingredients

1 1/2 C chopped Tofurky (I used Mojo Tofurky would work with plain too)

1/2 C cooked wild rice

1/4 C chopped dried figs

1/4 C chopped pecans

1 medium apple, cored and diced small

3 Tbsp vegan mayo

1 Tbsp spicy brown mustard

1/8 Tsp ground Rosemary

1/8 Tsp ground Cinnamon

Handful of Baby Arugula for each serving

Splash of Balsamic vinegar ( I used fig balsamic)

Splash of olive oil

Make It Happen

~Toss all ingredients except for Arugula, Olive Oil and Balsamic in a bowl to coat

~Toss Arugula, Olive Oil and Balsamic in a separate bowl to coat

~Serve Tofurky salad on top of a bed of dressed Arugula and enjoy.

The salad/greens combo is sweet, sassy and savory. It is both filling yet light, pleasingly crunchy and perfectly soft. You will really like this easy leftover makeover. In the next few days I will share another makeover using more of the wild rice that is in this salad. Why not cook once and create twice?

Having culinary  fun with Tofurky leftovers is just one more reason why I think Tofurky is  such a great food to make for your self and your omnivorous family when you are interested in incorporating meatless meals into your week. It is easy to prepare and fun to use as a starting place for exciting  new dishes the following day. Have fun, experiment and eat with gusto.
