6/11 Sweet Corn Soycutash

Happy Meatless Monday friends. I have always found Summer so conducive to preparing and enjoying meatless meals. There is always an abundance of gorgeous produce available, hot days want chilled foods and it feels easy to nosh on meals that aren’t laden with heavy animal products.

Yesterday was the inaugural swim a-thon for our Adult Kiddie Pool. That is a photo of our floating bar filled with chilled libations and Coconut La Croix. Yay Summer.

The entire weekend was unusually warm for June, 90 degrees both days. It was magnificently hot, very hot. Way too warm to cook. Besides, swimming is more fun than cooking. That is one of the things I love so much about Summer…..days so packed full of enjoyment and sunshine that you realize at 8:30 that you haven’t had dinner. On days (weekends) like that I appreciate having plant strong ready-to-go food in the fridge so I can continue to play and not have to work at a healthful meal. Not turning on the oven, stove or grill is an even greater bonus.

Many places have their own version of Succotash made with Edamame…here is mine. Hope you enjoy having it in your fridge as a quickie meal as much as I have.

Sweet Corn Soycutash

Ingredients

1.5 C cooked, shelled Edamame ( I purchased mine already cooked and ready to go in the produce section which made the salad even easier to prepare)

I C raw corn cut off the cob (approx 2 ears)

1  C chopped yellow pepper (or red or orange)

1 C dried cherries ( or dried fruit of your choice)

Dressing Ingredients

1 tsp Liquid Aminos

1/4 tsp chili powder

1 tsp garlic powder

Juice of 2 oranges

Juice of 1 lemon

2 tsp rice wine vinegar

Black pepper to taste

Make it happen

~Mix veggies and cherries together in a bowl and set aside.

~Combine dressing ingredients in a separate bowl and pour over veggies.

~Toss to coat. Cover, chill, enjoy.

The dish is playful, colorful and delicious. It is the type of food that I look for on a hot Summer day to keep me fueled for fun.
