12/16 Keeping It Raw

Wednesday was girls night out so Sandy and I and our crazy girlfriends  went to a Raw For The Holidays cooking class. It was fun to be out and about and neither of our friends are vegan, so it made me very happy that they were so excited about the new healthy, vegan dishes. We all left inspired to incorporate more raw dishes into our meals.

I have to be honest, I am still intimidated. Every time I pick up a raw cookbook my eyes glaze over and I immediately feel inadequate because it is filled with ingredients I do not recognize that require culinary tools I do not own. The last time this happened I slammed the cookbook shut, put it in the basement as if to punish it and baked buttery pecan tarts. That will show you, raw cookbook.

So last night as I was wading through emails I came across one from Abbey’s Vegetarian Recipes. The email included many  links to veg-tastic info but the one that caught my eye was from Gone Raw. The site is so full or easy to create raw vegan recipes that it felt like I had just received my first Christmas gift. The recipes range from the everyday to the sublime. There are so many to choose from that you could add a new raw dish to your table every day through the middle of next year. I found a recipe for a Raw Chocolate TartChocolateTart1.jpg.  It looks like the type of exquisite dessert you would find behind a glass case…being guarded and admired. The ingredient list is relatively short and can be purchased at most average grocery stores.  I am doing it….. I am going to throw caution…insecurity and my oven-mitts to the wind and rock out the chocolate tart. It looks gorgeous and I am ready to learn a new vegan, raw dessert. I look forward to telling you all about it.

    Raw recipes intimidate me a bit, too. I have found Kristen’s Raw recipes quite good (she has a blog and books). Ani Phyo’s recipes are pretty easy (I made a gorgeous beet ravioli that only required a mandolin for the beets and food processor for the filling! As for me, anything I create is pretty basic (granola in a dehydrator, nut-based cheeses in a food processor, etc)

    to tell you the truth I eat so many fruits, veggies, and hummuses I think I’m mostly eating Raw by default. I really enjoy many foods in their natural state…blessings from the earth in all their juicy happy goodness. :)
