5/12 Grill It

Today we are teaching our third vegan cooking class. The theme is “Grill It” and  I am very excited. The moment the temperature goes above 50 degrees I crave the taste of grilled edibles. We are offering a menu of alternatives to traditional grilling foods that will create beautiful and impressive food in a really easy way.  Your family, guests or spouse will not believe how much care and love you put into theses dishes. I am also going to create a fresh salsa with grilled pineapple, jalapeno, cilantro and a pepper. I am going to wing it tomorrow with ingredients we have on hand so I do not yet have a recipe to share. As soon as I do, I will. I think the sweet and the heat will be a perfect companion to both the fajitas and the BBQ tempeh.

Instructing the past two classes has been a surprising and fantastic growth experience for me. Honestly, a year ago I hardly cooked at all, Sandy did most of the cooking. There is no way I would have ever imagined myself teaching a classroom full of strangers how to cook vegan food (or any food). Truly amazing what a difference a year makes. Learning how to create soul satisfying compassionate cuisine has been so inspiring that I immediately felt moved to share it with others. Like, “Oh my goodness, you have to taste this. I never thought I could live without dairy either but taste this!” This continues to be a journey of firsts.

Kale Trail Update

Yesterday we did some cross training. As our sit bones were healing from the bike ride we decided to swim laps. Great choice. I have never swam laps for the duration that Coach Kelly asked us to swim (read almost freaked from fear or failure but kept swimming instead). We finished strong then had a huge breakfast.
