4/15 Chocolate Mole Mousse

The new issue of  VegNews just reached my mailbox and I have wanted to devour it ever since. The promise that a new magazine holds is intoxicating. Pulling into the driveway and seeing the magazine corner peeking out of the mailbox elicits the same reaction as a Lands End or Amazon.com box waiting on the porch. Something great is about to happen.

The first thing I found was a recipe for Choco-Mole Pudding. It requires limited ingredients  that are readily available. It is in harmony with both savory and sweet and this elegant dish can be made in a few whirring seconds in a food processor. Perfect.  I added a few ingredients and renamed it.

Chocolate Mole Mousse

Inspired by a recipe from Gena Hamshaw for VegNews

Makes four servings.

Ingredients

1.5 ripe avocados (mine were quite small)

8 Medjool dates, with the pits removed and soaked for at least one hour

5 Tbsp unsweetened cocoa powder

1 1/2 tsp cinnamon

1/16 tsp cayenne pepper ( I used one half of a 1/8 tsp)

1 tsp agave

2 tsp vanilla

3/4 c water

2/3 cup non dairy milk ( I used unsweetened vanilla almond milk)

2 Tbsp raw shelled pepitas for garnish (pumpkin seeds)

Make It Happen

Combine the first 7 ingredients and some of the water in the food processor and blend. Periodically scrape down the sides as necessary. Add the water little by little as you are whipping and scraping down the sides. Then add the milk little by little until you achieve your desired consistency.  Your finished mousse will have a dense, silky heft to it that will be irresistible.

Spoon your mixture into 4-6 oz  shooter glasses or dainty bowls and chill. When ready to serve, top with pepitas for a dazzling crunch and presentation. The heat and the sweet are craveable. I finished mine first and eyed Sandy’s like a predator.

This is an exquisite dessert but would also be the perfect thing for your afternoon pick me up. Throw away your 100 calorie packs and feed your body with healthy fats, dried fruits and a pinch of seeds for a naturally delicious chocolatey and sustainable energy boost. Feast on foods that love you back. Yum.
