1/17 Happy Meatless Monday

Happy Meatless, enjoy more Monday. Okay, I added that part but I like it. I am in the mood for something that tastes like Summer and fills me up like a vegan Mamma bear in Winter. If only I had some Brown Rice Summer Salad. There is a restaurant called Inn Season that makes a Brown Rice Salad that has long been my go to on their menu. It is bright and tangy and transports me to a flip flop kind of day. Sandy was able to replicate the feel and taste of that dish.

You can enjoy this salad with a crusty roll for lunch, along side  some veg ribs for an incredibly quick and easy dinner (that is what we enjoyed it with last night and it was vegtastic) or add chick’n to the salad for a delish Mediterranean inspired meal.

Brown Rice Summer Salad

Ingredients

2 Cups cooked Brown Rice

1 C  finely diced carrots

1 C finely diced cucumbers

1 C finely diced orange, yellow  or red pepper

1/4 C finely chopped fresh mint

1/4 C finely chopped fresh dill

1/4 C pine nuts

1/4 C dried currants

Make The Salad Happen

~Chop like crazy and put all herbs, veggies, currants and pine nuts in fridge safe bowl.

~Add cooled brown rice and mix gently.

~Add half of dressing and let chill.

Dressing Ingredients

1/4 C Olive Oil

1/2 C White balsamic vinegar

1/2 Tsp sea salt

1/2 Tsp course ground pepper

1/2 Tsp garlic powder

3/4 Tsp Agave

(All measurements are optional. if you like more or less, use more or less)

Make It Happen

~Whisk the heck out of it.

~Pour half over salad and store the rest in the fridge in case you need more once the rice has soaked it up. Or, you can enjoy it on another salad, roasted veggies or tofu.

Rejoice in the fresh herbs, nutty aroma and crisp texture of this dish. The trifecta will turn off the snooze button in your taste buds and wake up your senses from a long winters nap.
