11/15 Gimme Five, The Perfect Sandwich

Happy Monday!  This is the first of five posts this week that I’m sharing some fun original recipes with a twist, they will only have 5 ingredients each.  I promised to do this in Saturday’s post and  quickly realized that we are ingredient fiends.  Sandy and I love spices, nuts, extra dashes of this and pinches of that, and limiting ourselves to only 5 ingredients is going to be like cooking one handed.  Sandy is already beginning to pace through the kitchen wondering how to add robust flavors to recipes without busting out so many seasonings.

When I really think about it though,  one of the things that draws me in me when looking for a new recipe, (besides big, beautiful photos) is a short list of ingredients, usually ones that I already have in my pantry.  So, I am going to hold myself to that notion for five days this week and  keep it tasty, keep it vegan and keep it five semi-homemade….oops, I think someone else already uses that phrase.

The Perfectly Perfect Sandwich

Ingredients:

1 Everything bagel  (We used Trader Joe’s brand)

1 Tbsp of vegan butter (We used Earth Balance)

2 Slices of faux bacon (We used Smart Bacon)

1/4 Avocado

Handful of fresh spinach

Make it Happen:

Simmer the bacon in a saute pan,  about two minutes each side on medium low.  Meanwhile, pop the bagel in the toaster.  Slice the avocado into nice long slivers.  Rinse a handful of spinach and dry.  Butter the toasted bagel, add the bacon, avocado, spinach and indulge.

The best part of this sandwich is that it is so simple and so very yummy. I am an absolute lover of condiments. I really believe that food is just a vehicle for condiments and this is the only sandwich that I eat without condiments. The flavor comes from the buttered bagel and the avocado. This is the kind of  sandwich  your Grandpa would eat if he was vegan.

    I like avocados in my sandwiches. It gives it extra protein and makes you full faster, plus the creamy texture pairs up with almost anything in sandwiches.
