10/11 Dark Choco-Nut Truffles

As promised, here is the recipe for the second dish we took to the raw, vegan potluck. This  is a dessert fit for the finest of company, most elegant of friends or a night in with a loved one and a bottle of red wine.

They are a breeze to whip up and absolutely amazing in flavor. If you are serving these to a tough crowd, don’t tell them that they are raw or good for you or vegan. No one will ever know, it can be our secret. They look gourmet and taste sinful. Just go with that.

Dark Choco-Nut Truffles

Inspired by a recipe from Raw For Dessert

Ingredients

2 C raw walnuts, unsoaked

1 C raw peanuts, unsoaked

1/8 Tsp coarse sea salt

7 dates pitted and chopped ( I used dates that had pits because they are much larger than pitted dates from the store)

2/3 C Cocoa powder

3/4 C dried cherries

1 Tsp organic, unrefined coconut oil

2 Tsp water

Make it Happen

~In a food processor blend walnuts, peanuts and salt until coarsely chopped. Remove half of nuts and transfer to bowl.

~Pulse remaining nuts until finely chopped.

~Add dates and process until blended.

~Add remaining ingredients, including reserve nuts little by little just until mixed. The mixture will become increasingly more sticky and challenging to blend. Help  your processor along  with a wooden spoon by scraping down the sides while the  machine is off.

~Form (do not roll) mixture into bite-size, 1 inch balls. Mixture will make approx 44 truffles.

Display on a beautiful tray and wow your guests with your (raw, vegan, healthy alternative)  glutenous, decadent, Dark Choco-Nut truffles.
