9/7 Oh My, Peanut Butter Pie

One thing I have been missing since venturing vegan is the really deep, rich peanut buttery flavor of my favorite Peanut Butter Chocolate ice cream. The dairy free varieties are scrumptious and I have been enjoying them every chance I get, but I have secretly been pining away for the kind of peanut butter/chocolate experience that leaves you speechless.

Fear not…I have found it. Vegans unite and peanut butter lovers rejoice.

The recipe is fromĀ Veganbaking.net This site is out of this world. They have a collection of vegan recipes that is unrivaled. Many of the dishes are user- rated and most have a photo of the finished product, which you know I love. The recipes are test-driven by everyday vegan home chefs like me, which made me feel I could craft any of the recipes without being intimidated.

So here it is….the most amazing pie I have ever made or consumed. I tweaked the recipe to suit my tastes.

Warning: This pie is a hazard to your emotional state. As long as it is remains in your house it will torment you. Make it when you are having company so the majority of it will be consumed by guests.

Dark Chocolate, Peanut Butter Banana Pie

Adapted from a recipe found on Veganbaking.net

Ingredients

3/4 C peanut butter (I used Jif creamy, natural. It is so peanut buttery. It is ideal for baking.)

1/2 C water

1 TbspĀ dark Agave

1/2 Tsp coarse Sea Salt

1 1/4 C dark chocolate chips or shaved from block ( I used a mixture of dark chocolate chips and Bakers semi sweet chocolate squares shaved)

6 Tbsp warmed, non dairy milk (I used unsweetened Vanilla Almond milk)

5 Ripe (not too ripe) bananas. Cut peeled bananas in half and then cut lengthwise into slices.

9 Inch chocolate cookie pie crust

Make It Happen

~Preheat oven to 350 degrees.

~Whisk together peanut butter, water, agave and salt until very smooth. Set aside.

~ Melt chocolate slowly in a double boiler. Do not let the pots steam, that means your heat is too high.

~Once the chocolate is melted, stir in warmed milk until mixture is smooth and glassy.

~Arrange banana slices inside the crust

~Whisk peanut butter mixture again until it can be poured. If you need to add a Tsp of water or milk and whisk until smooth.

~Spread peanut butter mixture over bananas.

~Pour and spread chocolate over the peanut butter mixture.

~Bake for 30 minutes

~Let cool completely on a cooling rack.

Cut and serve at room temperature. Be showered with praise and affection. Eat a second piece when you are clearing the plates.
