8/19 Plum Crazy

The most amazing  plums are in season right now at our farmers market. They look like miniature plums because they are even smaller than the already small plum. If they didn’t have pits in them you could easily pop three in your mouth at a time. I have not verified this. They are insanely sweet in a way that you think they are pulling your leg or have been modified by an adversary in the sugar industry. Local is better, sweeter and cheaper. No way around it.

I decided to make a dessert with my beloved plums. This is what I came up with.

Deep Dish Plum and Walnut Crumble

Makes two individual servings

Ingredients:

4-5 Plums rough chopped (mine were mini so adjust if you need to)

1/3 C Golden raisins

2 Pitted dates chopped

1/2 Tsp  Agave (I used dark)

1 Packet of original flavor instant oatmeal

1/2 Tsp Dark brown sugar

2 Tbsp walnuts rough chopped

1 Tbsp cold vegan butter

1/4 C unsweetened milk (I used original almond)

Make It Happen

~Preheat oven to 350 degrees

~Put plums, raisins, dates, 1 Tbsp of walnuts, almond milk, agave and 1/2 of the packet of oatmeal in a bowl and stir until blended.

~In a separate bowl mix remaining  oatmeal, walnuts, brown sugar and cold butter with a fork until butter is mixed with oatmeal and forms a crumble.

~ Divide fruit mixture into two ramekins and top each with crumble mixture.

~ Bake for 28 minutes

Let sit for two minutes and then enjoy.

Tips:

~Put foil on your baking sheet in case the crumble runs over the side.

~Next time I will add more dates because I love them

~Serve ala mode. When we tested this recipe it was fantastic. With ice cream it would have been craveable.

The fruit combo is very succulent and creamy. The milk cooks down with the dates and creates a caramel flavored  emulsion to bathe the other fruit and nuts in. The “time in” ratio to wow factor with this recipe is in our favor. It is so easy and really looks organically elegant. Everyone loves an individual dessert. Double or triple the recipe for company and be a culinary goddess.
