6/13 Hot Curry Lime Banana Chips

Sandy made up a snack that is dairy free, sodium free, hassle free and will blow you away. If you don’t already  have a food dehydrator you will want to look for one at a garage sale or borrow your friend’s. These are so strange and  craveable. They are not to be missed.

Hot Curry Lime Banana Chips

Ingredients

3 large bananas, peeled

3 tbsp fresh lime juice

3 tbsp ice cold water

2 tsp curry powder

1/4 tsp cayenne pepper

Make It Happen

Cut the bananas in 1/4 inch slices.  Mix the lime juice and water together and toss the banana slices in the mixture, let sit for about 5 minutes.  Drain any excess water.  Sprinkle curry and cayenne powder over bananas and mix gently.  The banana slices soften in the lime and water mixture, so toss to coat gently with your hands.  Place banana slices onto dehydrator trays so they do not touch.  Our dehydrator only has one temperature, but if you search online for dehydrating bananas you will find many diverse opinions on preparation and time.

I dehydrated ours for 12-13 hours and they were perfect.

FYI:  the banana slices stick to the dehydrator trays, so you will have to peel them with your fingers.    I did this with about one hour left and turned them over, which seemed to dry them even better.

The chips are sweet, hot and crunchy and chewy. Once you have had one they will make you need more. They are addicting and satisfying. They just may become your new favorite snack. The best part is you season them and 12 hours later they are ready to love without any additional work.
