Watermelon Granita with Lime & Mint

Watermelon is one of my favorite foods. In the winter I miss it like I miss the sunshine and eighty degree days. It is juicy,  brilliantly colored and as naturally sweet as anything I have ever experienced. I love it so much that in our house it is known as Watermagic.

To honor this great friend I have created a fresh and easy dessert I think you will really love.

Watermelon Granita with Lime & Mint

Ingredients

4 Cups seedless watermelon

2 Tbsp dark brown sugar

1/4 cup Fresh lime juice

1 Cup of fresh mint leaves

Make it Happen

~Put all ingredients in your food processor or blender and blend well until the sugar is dissolved and the mint is finely chopped.

~Strain mixture through a colander to leave behind larger pieces of mint and white melon seeds.

~Pour mixture into baking dish. The more surface area the better (I used a 10.5 inch in diameter Corning Ware dish) cover and put in freezer.

~After 1.5 hours, scrape the frozen mixture off the sides and fluff  with a fork (like you would couscous) It will be slushy in the middle but not yet frozen.

~Repeat fluffing and scraping every hour until it reaches the desired consistency. You want it frozen and flaky (think shaved ice)

~Serve and bask in the praise that you will receive.

One batch makes enough for at least 6 servings.

The Granita is both sweet and tart while tasting minty and cool.  It is so refreshing and flavorful you will not believe it.

Another smashing way to serve this would be to mound it in a martini glass and float vodka around it. As the Granita melts it will become a watermelon-tini of the most sexy kind.

Because this was so easy to make with amazing results…I plan to make it all summer long with the yummiest fruits at the market that week. How amazing will nectarines be when they are at their peak?!
