9/23 Super Hero Breakfast

We are lovers of breakfast so I am always looking for new ways to energize the day. The mornings in Michigan are beginning to get chilly which immediately makes me crave oatmeal and all things warm. I decided to cook instant brown rice with milk and fruit because that sounds delicious and easy to me. Turns out…it is both. I have used many different types of fruit including dried cherries, pears and  apples but nothing compares to the drama of the fresh blueberry. As it simmers away, it becomes more and more vibrantly purple until it eventually looks like food for a super hero…which it is.

If you have the time you can make the rice from scratch. If not, don’t worry about it and make instant. Having a good hearty breakfast is what matters.

I wanted to share some lesser known tid bits about the benefits of  brown rice. Brown rice is rich in selenium which has been shown to  induce DNA repair and synthesis in damaged cells, while inhibiting the growth of cancer cells. Growth and repair..we like that.

In addition, brown rice is rich in magnesium which has been shown to reduce the frequency of migraine headaches by managing the intake of calcium by the nerve cells. When we don’t consume enough magnesium,  calcium can inundate the nerve cells which can cause excessive contraction of our blood vessels and muscles, causing a migraine. If you have ever had a migraine you know that you would eat a field of brown rice, uncooked and unfit for human consumption if you thought it would help alleviate them.

News you can use about the berry so blue. Researchers have found that blueberries rank #1 in antioxidant activity when compared to 40 common fresh fruits and vegetables. Concord grape juice is next on the list with about two thirds of the antioxidant activity of blueberries followed by strawberries, kale, and spinach. They are inexpensive, beautiful to cook with and fun to eat right out of the basket.

You are going to love this dish. It is warm, comforting and amazingly good for you. Bonus, if you have children they will FREAK out at the color.

Super Hero Breakfast

Ingredients

Serves two

2 Servings of brown rice

1/2 Pint of fresh blueberries

3/4 C of non dairy milk

Agave to taste

Make It Happen

~Prepare brown rice in water according to the package directions. While it is simmering, add the milk and blueberries to the rice and water.

~Once the rice has reached your desired doneness, stir in Agave to taste  and serve warm.

~I like to enjoy mine with a splash of extra milk on the top.
