4/1 Cauliflower Fried Rice

Happy Meatless Tuesday.

Lately I have been seeing and hearing a lot of info about grains not being healthy for you to consume,  because they are too fibrous and difficult to digest. This includes whole grains and quinoa, which up until now have been staples in our vegan diet. Because this is contrary to everything I believe and know about nutrition, it feels a bit confusing.

I just bought a book called, Grain Damage, that supports this theory. Even though I am still in discovery mode, I have begun to  limit my grain intake out of curiosity. Because we make stir fry’s almost every week, I thought I would  create  a non-rice for us to enjoy.

I love this dish because it is neither fried,  nor is it rice… but it tastes like it is. It is super powered cauliflower masquerading as a  grain. You may enjoy this rice raw (at room temp would be best) or heated in a saute pan. We enjoyed ours with a big veggie stir fry.

Essentially we had a rainbow of veggies served over veggies. Now that was a good day to have dessert. This dish reminded me of a fried rice because of its warm brown shade and the addition of veggies. I think the cauli rice would also love other add-ins like mushrooms, cilantro and snow peas. Feel free to just start throwing raw veggies into your food processor.

Cauliflower Fried Rice

Makes 6 generous servings

Ingredients

1/2 of an average size head of raw cauliflower, chopped

3/4 C shredded carrots ( I used shredded because I knew they would become small enough when pulsed as opposed to whole carrots)

3 stalks of  chopped celery

4 tsp tamari or low sodium soy sauce

1/8 tsp black pepper

Make It Happen

~Put all ingredients into food processor and pulse until crumbly and resembling rice.

~Enjoy raw or heated. I heated ours in a saute pan with a teeny amount of sesame seed oil and it was warm and sesame scented.

If you are interested in incorporating a few more raw foods into your world or would like to try a new cooked side dish, this is the one for you. It is like the over achiever of meatless meals.
