3/11 Dark Chocolate Cashew Tarts

Happy Meatless Monday.

As if we need another reason to adore avocados?  They are quite possibly the most amenable fruit available.  They want to be blended, cubed or stuffed, frozen, deep fried or consumed in the raw.   You prefer them savory, sure thing.  Need a  dessert…no problem.

I created a mousse with avocado, dates, cocoa powder and a few key things. I spooned this sinful mixture into individual muffin cups to sit on top of a raw cashew crust.  Then froze them, turning them into fudgesicles on a cashew stage.

Dark Chocolate Cashew Tarts

Makes 8 tarts

Crust Ingredients

2 C raw cashews

12 chopped dates (I prefer to purchase dates with the pits and remove the pits as I chop them. I think the dates are juicier.)

1/4 tsp sea salt

Filling Ingredients

2 avocado

12 chopped dates

1 Tbsp coconut oil

1/2 C cocoa powder

2 Tbsp agave or sweetener of your choice

1/4 C fresh orange juice (juice from two oranges)

1 tsp vanilla

1/2 tsp cinnamon

1/2 or less of non dairy milk as needed while blending to make filling creamy. I used  almond milk

Make it Happen

~To prepare your pan, place a square of plastic wrap or parchment paper inside each muffin cup. You want it to come up over the side because you will use this to lift each tart out of the tin  after it is frozen.

~Pulse crust ingredients until you have a  crumbly mixture that can form a moist ball in your hand.

~Put dollop of crust  mixture into bottom of prepared muffin tins and push into bottom. Place tin into freezer while you prepare your filling.

~Put mousse  ingredients into food processor and blend several minutes until very creamy. Add non dairy milk 1 Tbsp at a time and scrape down the sides of the container as necessary. Only add enough milk to aid in blending. You are looking for a very dense and thick mousse.

~Spoon mousse into prepared muffin cups. Cover and freeze for several hours or overnight.

~When ready to serve, pop individual tarts out of tin and allow to thaw for 10 minutes or until your preferred state of thaw and enjoy.

Creating creamy and luxurious  desserts from avocado feels like the most luxurious thing I can do for my body. They taste good and feel good too.  It is like taking my insides to the spa by eating dessert. Thank you avocado for always out doing yourself.
