9/3 Western Ramble Tofu Scramble

Happy Meatless Monday.

I love breakfast. Breakfast welcomes you to the day, it energizes your sleepy body and feeds your brain so you can be inspired and effective. One of the most common questions I have heard since becoming vegan has been, “If you don’t eat eggs, then what do you eat for breakfast?” It is a valid question because before I knew about the inhumane treatment and suffering of egg producing chickens, I used to really enjoy eggs. Now I know, and have decided to enjoy all of the delicious egg free alternatives for breakfast like Tofu Scramble.

A good  Tofu Scramble recipe is like the training wheels of  veganism. It can be dressed up, put in a wrap, served for dinner and made for a champagne brunch. It is what to serve your visiting omnivorous in-laws and your kids on their way out the door. It looks like eggs, is even more delicious and is cholesterol free. The best part, no chickens were harmed in the making of this breakfast. I’ll raise a glass of juice to that.

Western Ramble Tofu Scramble

Ingredients:

15 oz pkg of extra firm tofu

2 tbsp liquid aminos

1/2 tbsp nutritional yeast

1 tsp garlic powder

1/2 tsp turmeric

1 C bell pepper  chopped (I used orange, but could use green or red)

1/2 C parsley chopped

1/4 C black olives chopped

salt and pepper to taste

Make it Happen:

Drain water from tofu package.  Then, press excess water from tofu, using double layer of paper towels and pressing between palms of your hands or 2 plates, whichever is easier.  Lightly coat large skillet with spray oil, put on medium low heat and break up tofu into crumbles using your fingers.  Simmer for 2-3 minutes while stirring.  Then add liquid aminos, nutritional yeast, garlic powder and turmeric,  (the turmeric helps turn the tofu yellow),  stir together thoroughly.   Add bell pepper, stir and simmer for 3 minutes more.  Add olives, simmer another minute and then add parsley and simmer all together for another 2 minutes.   Serve with your favorite toast.  Salt and pepper to taste.  Makes 3-4 servings.

Have fun crafting your scramble by adding shrooms, spinach, tomatoes, anything  you could enjoy in an omelette.

    How do you feel about backyard chickens? I have a small happy flock of six chickens that I’ve raised from day old chicks. They free range all day and eat grass and bugs. I just take the eggs that they’ve produced naturally. I don’t give them hormones, or keep light in their coop to increase their production.
