I whipped up another popsicle creation. This green-tastic one is Pistachio. They are creamy and refreshing. The roasted nuts add a nice crunch and a slightly salty taste. It has been so perfectly warm and muggy over the past few days. I absolutely love it like this. It is the ideal popsicle weather.

Ingredients:

1 Box pistachio instant pudding mix (I used sugar free/fat free)

2 Cups cold milk of your choice (I used original almond)

1/4 cup  roasted pistachios

Popsicle molds

Make it Happen:

~Make the pudding according to the directions on the box

~Pour nearly set pudding in food processor or blender. Add pistachios and blend/whip until the nuts are  desired size

~Pour in to popsicle molds and put in freezer

~ Distract yourself for several hours as they set and freeze. (Hardest part)

Hoard them for yourself or share them with someone really, really deserving.

The light green color made them look as cool as their refreshing flavor. The roasted nuts made them taste like grown up, decadent ice cream pops. They are easier to make than trying to get store bought ones home without melting. Give it a try and share your flavor combos with us.
