6/3 Strawberry Balsamic Popsicles

Happy Meatless Monday and self proclaimed All Things Frozen Week.

This week I want to celebrate the return of Summer by  focusing on dairy free desserts to enjoy as the sun blazes overhead. It has been steamy hot here in Michigan. The kind of hot  that makes you want to eat popsicles for lunch and ice cream for dinner.

The humidity, sunny skies and desire to eat a packed waffle cone at every meal are all markers for my favorite time of year. I love it and I love it here. Michigan Summer is the most reckless thing going. It shows up without warning when the days  go from 30 degrees to 85 in what feels like just a few days. Then, because Summer is so short, Michiganders live it like it was stolen. We swim, bike ride, get dirty and eat ice cream and popsicles…any darn time we want. It is the best.

One of my favorite restaurants in town  makes a Strawberry Balsamic martini. It is a seasonal Summer favorite and I thought it would make a smashing popsicle flavor. The balsamic vinegar is like a megaphone for the strawberries. It is summer in stereo…just like Michigan. All you will need are 4 oz popsicle molds in any shape to join in the fun.

Strawberry Balsamic popsicles

Ingredients

3/4 C finely diced strawberries

2 C strawberries

2 Tbsp balsamic vinegar

2 Tbsp raw agave

Make it Happen

Divide 3/4 C diced strawberries into the popsicle molds to create nice chinks of fruit in your popsicles

Blend the 2 C strawberries, vinegar and agave in food processor or blender until smoothStrawberry Balsamic popsicles 003

Pour liquid into each mold over strawberries. Tap molds to remove bubbles and to allow juice to flow beyond berries to the bottom of molds. Run a knife along the inside of the molds and berries  if necessary to help liquid get to the bottom.

Freeze for at least four hours or overnight. When ready to enjoy, run mold under hot water for a few seconds to release popsicle. Sit on your porch and enjoy. They are a grown up version of a childhood favorite with better taste.  It is like the cocktail party version of the icee.

Frozen treats don’t have to have cows milk to be awesome. This week we will check out several different ways to have our frozen treats and be compassionate too. There is nothing so chilling as the cruelty to cows. Lets avoid it and go for things that taste good and do good. We can have both and that tastes great.
