11/12 Happy Meatless Monday Thai Feast

Happy Meatless Monday. I have four recipes to share for an unforgettable Thai inspired meal. The recipes come with a  side dish of vegan undercover  activism.

In September, Sandy and I helped with a  fundraiser for our local animal shelter.  The event,  called No Beast Feast, created by our friend and fellow veg lover Jo, features an extraordinary vegan meal.

Sandy and I had the opportunity to prepare a dish for the 200 attendees, then donate a catered, vegan  dinner for six as an auction prize. We had been interested in continuing our vegan catering and thought this would be a great way to have a presence with an appropriate crowd.

The night of the event I was caught off guard by a tsunami of insecurity…..what if no one bids on our prize and we don’t raise any money for the animal shelter? What if no one wants us to cook for them and it becomes so humiliating that we shrivel up and die?

As I am sure you can imagine, that did not happen. People went crazy over the offering and did everything they could to win it.  Crisis averted, negative feelings  unsubstantiated and released. Success all around.

The winners of the auction prize chose today for  their meal and have invited 2 couples as their guests. It is exciting when I think about the  fact that tonight, six people will enjoy a vegan  meal for Meatless Monday. Maybe this will be the first time for some of them?  Maybe they never considered it before and now they will in the Mondays that follow? It is one step closer, one  meal closer to helping all that are curious see how delicious  plant based food can be. If you cook it (and deliver it to their house) they will come. Spreading the love vegan style.
