7/23 Vegan Vichyssoise

Happy Meatless Monday. I love soup, even in the summer. It is a meal that transcends seasons because it is comforting, fillng and can be easy to create. I love chilled soup, spicy soup and thick and creamy soup.  Sandy has taken a classic Julia Child’s recipe and has reinvented it for a greener approach. Although there are vegan replacements for all the dairy that the original soup requires, we decided to leave it out this time, resulting in a light and Summery, potato soup. Because it is all veggies, herbs and spices,  it is also a nice soup for the eating portion of a juice fast, which is how we used it. I enjoyed this soup both chilled and slightly warmed, depending on my mood and the day. Both iterations were superb. This is an easy Meatless meal that will feed you and your friends or family for a few days.

Vegan Vichyssoise

Original recipe by Julia Child and reinvented by S. Boulton

Ingredients:

4 C water

2 C low sodium  veggie broth

4 C potatoes, peeled, cut in thin half moons

2 C chopped celery

4 tsp nutritional yeast

2 tsp granulated garlic

1 tsp ground pepper (or more to taste)

1 tsp sea salt (or more to taste)

1/4 C fresh chopped parsley to garnish

Make it Happen:

Bring water and veggie broth to a boil in large stock pot.  Add potatoes and celery, simmer for 40-50 minutes until veggies are very soft. Add nutritional yeast, garlic, salt and pepper and stir.  Using immersion blender or regular blender, carefully purify the soup.  Serve hot, at room temperature or as a chilled soup.  Garnish with fresh parsley before serving.   Makes 6 servings.

Notes From The Juicer

I will never again take chewing for granted. It is day three of all juice and  honestly, it has felt very difficult.  It has been hard to keep up with juicing all day, to feel satisfied and to not want to cry all the time.  Preparing, using and cleaning the juicer could become my full time job to keep two of us in five juices per day. Not eating, only drinking  had made me feel depressed at times and  wildly energetic and awesome at others.

Yesterday as I walked through the produce section of the grocery store I saw an abundant display of corn on the cob and thought lustily…..if I could only sink my teeth into you right now, I would have a reason to live. I have never lusted over consuming produce as I do now. Steaming mugs of coffee and pita chips are absolutely out of the question…just give me something I can eat with a fork for god’s sake like a stir fry or a cooked sweet potato. I am confident today is the day that I have my juicing breakthrough of boundless energy and clarity of mind. The kind of epiphany that is well deserved and changes your mind about the difficult road that got you there. Today will be that day.
