8/22 A Meaty Meatless Monday & Two Winners

Happy Meatless Monday. Convenience is important and convenience foods are a lifesaver to have. Especially when you are trying out your Meatless Mondays or Tuesdays.  I just figured out an inexpensive and healthful  way to create a convenience food that we used to have in our freezer all the time. This version is nearly sodium free, only has three ingredients and can be whipped up in two seconds. That is convenient.

Last week as I was playing Mad Vegan Scientist I fell into an amazing concoction (mistake) that we now love. I was trying to make one thing and ended up with a really tasty and easy meaty filling for tacos, stuffed peppers, pasta, chili, or really for any dish where you would like some heft.

Savory Walnut Filling

Ingredients

1 C raw walnuts soaked for an hour or so

3/4 tsp liquid aminos

A ton of cracked black pepper to taste

Make it Happen

Pulse all ingredients in your food processor until yu reach your desired consistency.

Honestly, I don’t know why it tastes SO good. I wanted to add more ingredients out of habit,  but it was really fantastic the way it was. Feel free to use this as a base recipe, then add additional flavors based on what you are preparing. We used ours in tacos so Sandy threw in cumin, garlic, paprika and salt free seasoning mix. (she added a little water and a dash of liquid aminos to bind the seasonings). The tacos were sensational and different than any filling we have ever enjoyed.

I believe that convenience goes a long way in  helping us make compassionate choices.  Life can be complicated….sometimes we just need nourishing ourselves to be easy. Throw some walnut and a few spices in a food processor and you have the perfect filling. That’s pretty easy.
