12/29 Pink Grapefruit Avocado & Pistachio Salad

Yesterday every part of me was craving something saturated with flavor that was fresh and bright. Something to wake up my dreary mind and sleepy body. This is what I came up with.

Pink Grapefruit Avocado & Pistachio Salad

Ingredients

Sections of 2 pink grapefruits (all grapefruit, no membrane)

1/2 C Pink grapefruit juice (the juice will literally  pour out when you are sectioning the grapefruit so you can make your sections over a bowl)

1 Tbsp coconut oil liquified

1.5 Tsp Agave

4 C shredded purple cabbage

1/4 C chopped raw pistachios

A dash of cayenne pepper

Pinch of sea salt

Cracked black pepper to taste (I used a lot because we love it)

Make It Happen

~Section both grapefruits setting the juice aside and the sections aside in a separate bowl ( I cut the sections in half so they would be bite size)

~Using a jar with a lid (or whatever apparatus you would like to shake up a dressing) add grapefruit juice, coconut oil, cayenne, sea salt, pepper and Agave

~Shake vigorously (If it looks like the dressing is coagulating because the grapefruit juice is colder than the coconut oil, warm the dressing a tiny bit to help the oil re-liquify)

~Pour half of the dressing over the shredded purple cabbage and toss to coat. Set aside  so the flavors can meld together and slightly soften the cabbage

~Dice  two avocados into 1/2 inch cubes. Add to the grapefruit and toss gently

~Add  the remaining dressing, a dash of sea salt and fresh cracked pepper to the grapefruit  avocado mixture and toss gently to coat.

~Chop pistachios

~Make a small nest with the cabbage and pile the grapefruit avocado salad on top. Sprinkle with pistachios and prepare yourself for some edible joy.

The coconut infusion with the creamy avocado and brilliantly juicy pink grapefruit transported me to an eighty degree day on a yacht with the most comfortable lounge chair and a wide brim hat. The zing and the tart and the sweet were like a triple espresso for my winter weary taste buds.

You are going to love this salad. Recipe will make four small portions or two meal size portions for two hungry girls.
