So the holidays are officially here and that means entertaining or in the very least…showing up at your friends and families homes with edibles to share. This is of course an amazing opportunity to dazzle your veg and meatatarian friends alike with your culinary artistry….ultimately making them beg for your stash of vegan recipes.

We created this dip for a family gathering over the weekend. It was absolutely craveable, a huge hit with everyone…including the little ones and it was easy to make with a greater wow factor than time spent. Perfect when time is at a premium. It is also worth mentioning that this dip is such a healthy and delish respite from the high fatty foods that are so available during  holiday events and gatherings. It feels decadent, yet  fresh and light.

My Big Fat Greek Dip

Ingredients

12 oz Hummus (We used original)

3/4  Red pepper diced

3/4 Cucumber diced (try and use seedless or remove the seeds)

1/2 C chopped Kalamata Olives

1 C chopped tomatoes (We used Golden Heirloom)

1/4 C toasted pine nuts

*Ingredients notes- This is a very casual layered dip. If you want more olives…use them. If you want fewer tomatoes…do that.

Make It Happen

~Spread hummus on a serving tray or platter

~Layer ingredients evenly on top of the hummus

~Serve with pita chips and your fave crackers or crusty bread.

~Decide to skip the party, open a bottle of red wine and get nuts with your Big Fat Greek Dip.
